jQuery Mobile icons are a fixed size, and not easily changed. If you want a different size, you will have to find your own solution.
It's unclear what you intend to do with the icons. "in the header" is vague. Do you mean to use these on buttons? Will you be using them with or without text and the "circle" around the icon?
I've found the use of webfonts to be a good alternative to JQM icons. I've used font-awesome with good results, but you can also create your own webfont with whatever icons you would like.
It is possible to retrofit jQuery Mobile to use font-awesome for icons. Look for jQuery Mobile Icon Pack. I've found this CSS to be a bit off, but with some adjustment was able to get it to work.
I've been using just icons (no button) in headers for some time now, and it seems to fit-in with the new iOS 7 look-and-feel. I don't use any jQuery Mobile widgets for this - it is better just to style your own simple divs.
